Irish Soda Bread

Kendall Tavern Inn B&B Irish Soda Bread

Serves 16

4 cups flour
1 cup sugar
1/2 cup (1 stick) margarine
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 1/2 cup sour milk (can add 1 tsp. lemon juice or vinegar to whole milk)
1 cup raisins or dried cranberries

Mix together dry ingredients then add eggs, milk & raisins. Stir until combined.
Place in tube o Bundt pan using non-stick cooking spray. Sprinkle top with sugar.

Bake at 350 for 50 minutes or until pick comes out clean. Cool 10 minutes before removing from pan. Serves 16.
